Amma picks the Rajapuri mangoes for Meenamma Farm's classic mango pickle in April or May (depending on when the tree flowers).
After amma's hands slice and dice the mangoes, she coats the mango pieces in traditional Malalyali spices, and immerses it in oil to let the pickling process begin. The longer the wait, the better the pickle.
Our pickles have been maturing since 2016.
